What are proteins

Proteins are vital constituents in all living cells, both animal and plant, and have a major role in the growth and maintenance of tissue. They are large molecules made up of units called amino acids, which themselves are very rich in nitrogen. The quantity of each amino acid present and the way in which they link varies from protein to protein.

Some amino acids MUST be present in the diet of a particular species - these are the ESSENTIAL amino acids.

Whilst all plants contain protein, vegetable proteins of interest for food and feed uses primarily consist of, or are derived from, oilseeds (such as soya and rape), pulses (such as peas and faba beans) and cereals (such as wheat).
